Syrah-Merlot 2009
We have been working with Organic grape growers for years. They show the same dedication and love for the land that we have for our wines. It has been a wonderful experience and have now bottled it: Promessa Organic Syrah -Merlot.
We are certified Organic; this is altogether a rigorous philosophy and discipline. It is a different way of looking at the vines, their interaction with nature and environment and the support they need from us to produce superbly balanced flavorful grapes.
Organic Winemaking is a dedicated discipline too – cold fermentations, in our classic style, to preserve the natural fruity character of the grapes, careful handling, no air, no manipulations, just pure flavors from the vineyard.
About sulfur dioxide: First of all wine yeast produce sulfur dioxide on their own as part of the fermentation process.
How do you keep the added sulfur dioxide as low as possible? Immaculately clean processing, cold storage and avoidance of contact with heat or air allow us to make organic wine with very small additions of sulfur dioxide. You can make wine without sulfur dioxide, just not good wine! Without some the wines would not be drinkable!
We made the Merlot and Syrah separately; the Merlot is a powerhouse with inky dark color and massive weight while the Syrah brings a fresh cranberry, strawberry and black pepper aroma to the blend. They more than complement each other!
