This is our third vintage of A Mano Aleatico! It is wine that never fails to delight and surprise everyone who tastes it! Plus it is a lot of fun to make… So we naturally we keep doing it. Our Aleatico comes from un-irrigated vineyards that grow on well-drained, minerally dark brown soil very close to Gioia del Colle.
The grapes were harvested by hand from the 15th to the 22nd of September 2009 into small boxes. They were dried slowly for 8 weeks. With temperature and humidity kept under rigorous balance the grapes continue to develop flavor during the drying period. Once crushed the grapes were chilled to 18°C.
Fermentation proceeded slowly, with lovely color extraction and full fruit expression. The wine was aged in old, almost neutral 700 liter casks made from Chestnut and Cherry wood by our cooper in Naples. A Mano Aleatico 2009 instantly shows an elegance and perfume that is extraordinary. Notes of red roses, intense cherries and a lightly sweet finish make this a highly unusual and enjoyable wine. A Mano Aleatico goes beautifully with our traditional almond cookies, but its character also shows well with aged, savory cheeses.
