Taste it. The complexity is astonishing; raspberries, fresh cherries, orange blossoms and toasted hazelnuts take turns in the forefront.
In the mouth there is a minerality and lemony crispness that persists for a very long time.
Our inspiration was the Champagne concept of blending blanc de blanc (in our case Greco) and blanc de noir (half Primitivo, half Negroamaro).
The base wine fermented for two months at 6°C and then went through malolactic fermentation to provide the big mouth feel.
The second fermentation, with the wine in the charmat tank resting on the lees, lasted for 4 months which gives the very fine bubbles and complexity.
